‘GOLDEN DRESSING with KOJI’

Don't you feel energized just looking at the color of this dressing? You can eat it every day and never get tired of it..

This colorful dressing is made with refreshing lemons and the bounty of the earth, turmeric. What a great idea to have salted koji and amazake in their !
Turmeric is used for color and flavor, giving it a vibrant yellow color. It has anti-inflammatory properties, increases the antioxidant power in the body, and helps prevent cancer. Lemon is rich in citric acid, which helps relieve fatigue, and vitamin C, which increases stress tolerance. You can eat it every day and never get tired of it.

INGREDIENTS 6 Servings

  • 1 tablespoon Shio Koji

  • 2 tablespoons Amazake (or 2 teaspoon maple syrup)

  • ¼ cup raw almond butter, unsalted

  • ½ cup water

  • zest from half a lemon

  • 3 tablespoon fresh lemon juice

  • 1 tablespoon fresh grated ginger

  • 1/2 clove garlic (for milder garlic flavor, sub ⅛ teaspoon garlic powder)

  • 1 teaspoon ground turmeric

  • black pepper


INSTRUCTIONS

  1. Mix all ingredients in a medium bowl with wire whisk until well blended. Cover.

  2. Refrigerate until ready to serve.
    Whisk dressing before drizzling over salad greens.


Note

  • Store leftover dressing in an airtight container in the refrigerator for 7-10 days.

  • The amounts of Amazake and Shio koji are approximate. Add a little at a time to adjust the taste.

  • Home-made amazake and Shio Koji will continue to ferment as long as they are unheated. The taste will change little by little, but enjoy it and enjoy the delicious changes.

    Please eat it up within a week.
