Koji is delicate and sensitive to heat and humidity. Please store it in a cool, dry place upon arrival. Refrigeration or freezing is also possible.

Once opened, reseal the bag tightly and keep it with a desiccant packet. For extra protection, we recommend transferring it to an airtight container or placing the bag inside another resealable bag to prevent moisture exposure.
