Kinzanji miso isn't a seasoning, it's a food. You eat it on rice, on cucumber, straight off the spoon. It's koji made from rice, barley, and soybeans together, mixed with chopped eggplant, cucumber, shiso, ginger, and carrot, then left to ferment into something closer to a relish than a paste.
This is the starter for that mixed koji, and it's also what I use for mame miso — the all-soybean miso from Aichi that goes into red miso soup and dote-ni.
It's the most unusual thing in this shop and the one almost nobody outside Japan has made. That's exactly why I keep carrying it.
