How to Make Amazake with Koji
This non-alcoholic amazake recipe is perfect for beginners. Made with yellow koji (rice koji), it’s naturally sweet, supports digestion, and is loved by both kids and adults.
Here’s the basic recipe and an easy smoothie idea using amazake and banana!
Basic Amazake Recipe (Yellow Koji)
Ingredients (Approx. 1L)
Koji (dried or fresh) … 200g
Cooked white rice … 200g
Water … 400–500ml (adjust to taste)
Instructions
Soften the cooked rice and cool it down to about 60°C (140°F).
Mix the rice, koji, and water together.
Keep the mixture at 55–60°C (131–140°F) for 8–10 hours
using a rice cooker (keep warm mode) or yogurt maker.Stir a few times during fermentation.
Once sweet, let it cool and store in the fridge (lasts about 1 week).
Tips
Enzymes work best under 60°C.
Non-alcoholic and great for kids.
Enjoy hot or cold.
